Place the cookie slices on an ungreased baking sheet. Gently press mini chocolate chips into the surface of each cookie to resemble watermelon seeds. Repeat with the remaining dough, and the remaining half of the dough. (20 minutes)

Bake in the preheated oven for 8 to 10 minutes, or until the edges are just beginning to turn golden. Be careful not to overbake. (10 minutes)

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. (20 minutes)

In a small bowl, whisk together the confectioners' sugar and water until smooth. Add green food coloring until you achieve your desired shade of green. (5 minutes)

Once the cookies are completely cool, dip the rounded edge of each cookie into the green icing to create the watermelon rind. Place the dipped cookies on wax paper until the icing is set. (15 minutes)

For a more intense watermelon flavor, consider adding a drop or two of watermelon extract to the dough.
If the dough becomes too soft while working with it, return it to the refrigerator to chill for a few more minutes.
Store the finished cookies in an airtight container at room temperature for up to 3 days.
