In a Dutch oven or large pot over medium heat, brown the chorizo sausage, breaking it up with a spoon as it cooks. (10-12 minutes)

Add the chopped onion and minced garlic to the pot with the sausage. Cook, stirring occasionally, until the onion is softened and translucent. (4-5 minutes)

Pour in the chicken broth, black beans, fire-roasted tomatoes, diced zucchini, frozen corn, garlic & butter rice, and Italian seasoning. Stir well to combine.

Bring the soup to a simmer, then reduce the heat to low. Cover and cook for 12-15 minutes, or until the rice is tender and the flavors have melded together beautifully.

Ladle the soup into individual bowls and sprinkle with shredded Parmesan cheese. Serve immediately, with extra Parmesan cheese on the side if desired.

For a spicier kick, use a spicier chorizo sausage or add a pinch of red pepper flakes.
Feel free to customize the vegetables to your liking. Bell peppers, carrots, or celery would also be delicious additions.
If you don't have garlic & butter flavored rice, you can use plain rice and add a pat of butter and a pinch of garlic powder to the soup.
This soup is even better the next day, as the flavors have more time to develop. Store leftovers in an airtight container in the refrigerator for up to 3 days.
