Season with soy sauce, salt, and ground ginger. Ensure the filling is well combined and then remove from the heat.

Assemble the Lumpia: Lay a spring roll wrapper on a flat surface, positioning it at an angle. Place a scant 1/4 cup of the prepared filling in the center of the wrapper. Fold the bottom corner over the filling, then tuck in the sides to create a roll. Lightly moisten the edges with water to seal. Repeat this process with the remaining wrappers and filling.

Prepare for Air Frying: Lightly mist each assembled lumpia roll with avocado oil cooking spray to encourage browning and crispiness.

Air Fry to Perfection: Preheat your air fryer to 390°F (198°C). Place the lumpia rolls in the air fryer basket, ensuring they are not overcrowded and not touching each other. You may need to cook them in batches. Air fry for 4 minutes, then flip the rolls and continue cooking for another 4 minutes, or until the skins are beautifully crispy and golden brown.

For a milder flavor, substitute the hot Italian sausage with sweet Italian sausage.
Don't overcrowd the air fryer basket; cook in batches to ensure even crisping.
Serve immediately for the best crispy texture. These are delicious on their own or with a dipping sauce of your choice.
