In a large pot, combine the vegetable broth and cubed sweet potatoes. Bring to a boil over medium-high heat and cook until the sweet potatoes are tender, approximately 7 minutes.

Once the sweet potatoes are tender, add the black bean puree and chopped roasted red peppers to the pot. Reduce the heat to low. Stir in the chopped cilantro, smoked paprika, and fresh lime juice.

Simmer the soup, stirring occasionally, until heated through and the flavors have melded together, about 5 to 7 minutes.

For a creamier soup, reserve about 1 cup of the cooked soup before adding the cilantro and lime juice. Blend this portion and then stir it back into the pot.
If you prefer a spicier soup, use a medium or hot picante sauce, or add a pinch of cayenne pepper.
Garnish with a dollop of sour cream or Greek yogurt, a sprinkle of crumbled cotija cheese, or a few tortilla chips for added texture.
