For a richer flavor, consider roasting the sweet potatoes before adding them to the soup. Toss them with olive oil, salt, and pepper, then roast at 400°F (200°C) for 20-25 minutes, or until tender and slightly caramelized.
If you don't have an immersion blender, you can carefully purée the soup in batches using a regular blender. Be sure to vent the lid to prevent pressure buildup.
For a vegan option, substitute vegetable broth for the chicken broth.
Garnish ideas: toasted nuts, a swirl of coconut milk, a dollop of Greek yogurt, or chopped cilantro.
