For an extra layer of flavor, consider using smoked bacon. It adds a wonderful depth to the soup.
If you prefer a thicker soup, you can mash some of the gnocchi against the side of the pot while stirring.
Feel free to experiment with different types of cheese. Gruyere or Monterey Jack would also be delicious in this soup.
This soup is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave.
