Follow The Directions

01

Step

Prepare the Gizzards: In a large saucepan, place the chicken gizzards and add enough water to cover them. Cover the saucepan and bring the water to a boil over medium-high heat. Boil for 10 minutes. (10 minutes)

02

Step

Drain the gizzards, reserving the cooking water. Chop the gizzards into bite-sized pieces. Set aside the reserved water for cooking the rice. (5 minutes)

03

Step

Cook the Rice: Cook the instant brown rice according to package directions, substituting the reserved gizzard water for plain water. This will infuse the rice with extra flavor. (15 minutes)

04

Step

Sauté Aromatics and Gizzards: Heat the vegetable oil in a large skillet over medium heat. Add the diced red onion, chopped mushrooms, and minced garlic. Sauté until the onion is tender and translucent. (8 minutes)

05

Step

Add the chopped gizzards to the skillet and sauté for an additional 5 minutes, allowing them to brown slightly and absorb the flavors of the aromatics. (5 minutes)

06

Step

Simmer in Broth and Tomatoes: Stir in the chicken broth, dry onion soup mix, and drained diced tomatoes. Bring the mixture to a simmer, then reduce the heat to low and cook until the sauce has reduced by about half, thickening slightly. (10 - 15 minutes)

07

Step

Combine and Serve: Stir the cooked rice into the gizzard and vegetable mixture. Heat through, ensuring the rice is well coated with the flavorful sauce. Season with salt and freshly ground black pepper to taste. Serve immediately, garnished with fresh herbs if desired.

For a richer flavor, consider using homemade chicken broth instead of canned.
Adjust the amount of onion soup mix to your preference. Start with half the packet and add more to taste.
If you prefer a spicier dish, add a pinch of red pepper flakes to the skillet along with the garlic and onion.
Fresh thyme or parsley would be a delightful addition to this dish. Stir in chopped fresh herbs just before serving.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
