In a large pot or Dutch oven, heat over medium-low heat. Add the sausage and onion and cook, breaking up the sausage with a spoon, until the onion is softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Add the chopped spinach to the soup. It may seem like a lot, but it will wilt down quickly. Stir in the fresh basil and red pepper flakes. Simmer for another 5 minutes.

Season the soup with salt and freshly ground black pepper to taste. Serve hot, with grated Parmesan cheese on the side.

For a richer flavor, brown the sausage in a separate pan before adding it to the pot.
You can substitute other types of pasta for the tortellini, such as ravioli or small shells.
If you don't have fresh spinach, you can use frozen spinach. Thaw it and squeeze out any excess water before adding it to the soup.
For a vegetarian version, omit the sausage and use vegetable broth instead of chicken broth. Add a can of cannellini beans for extra protein.
