Follow The Directions

01

Step

Prepare the Conch: Pound the conch meat with a mallet until tender. Chop into bite-size pieces. Place in a bowl, sprinkle with lemon juice, and set aside. (Prep time: 15 minutes)

02

Step

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the minced garlic, diced onion, green bell pepper, red bell pepper, diced celery, and chopped mushrooms. Cook until the vegetables are tender and slightly softened. (Cook time: 8-10 minutes)

03

Step

Simmer the Sauce: Stir in the stewed tomatoes, Worcestershire sauce, ketchup, and sugar. Season generously with red pepper flakes, salt, and pepper to taste. Bring the sauce to a gentle boil, then reduce the heat to low. Simmer uncovered, stirring occasionally, for 20 minutes to allow the flavors to meld and deepen. (Simmer time: 20 minutes)

04

Step

Combine and Cook: Gently mix the prepared conch meat into the skillet with the simmering sauce. Continue to cook for an additional 10 minutes. Be careful not to overcook the conch, as it can become tough. The goal is to heat it through while maintaining its tenderness. (Cook time: 10 minutes)

For optimal tenderness, ensure the conch is thoroughly pounded before chopping.
The sauce can be made ahead of time and refrigerated for 3-4 days, or frozen for longer storage. Simply reheat the sauce before adding the conch.
Adjust the amount of red pepper flakes to your preference for heat.
Serve immediately over white rice or fine noodles, accompanied by a green vegetable such as peas or green beans and warm French baguettes. A crisp white wine complements this dish beautifully.
