Prepare the Green Beans: In a medium pot, combine green beans with enough water to cover. Add baking soda. Bring to a boil, then reduce heat to medium and cook until green beans are nearly tender (7-10 minutes). Drain and set aside.

Cook the Potatoes: Place diced potatoes in a large pot with 2 cups of water, or enough to cover. Bring to a boil, then reduce heat to medium and cook until almost tender (about 20 minutes). Do not drain the water.

Sauté Aromatics: In a large skillet, melt butter over medium heat. Add diced onion and bacon bits and cook until onions are soft and translucent (5-7 minutes).

Combine and Simmer: Transfer the onion and bacon mixture to the pot with the potatoes. Add cream of chicken soup and milk; stir until smooth. Incorporate the green beans. Season with salt and pepper.

Final Simmer: Place the pot over low heat and simmer the soup until heated through and the flavors have melded (about 30 minutes).

For a vegetarian option, omit the bacon bits or substitute with smoked paprika for a smoky flavor.
Adjust the amount of milk to achieve your desired soup consistency.
Fresh herbs like thyme or parsley can be added during the final simmer for added flavor.
If you don't have cream of chicken soup, you can make a substitute with a roux, chicken broth, and cream.
For a smoother texture, you can use an immersion blender to puree part of the soup before adding the green beans.
