For an even creamier salad, use full-fat mayonnaise. Adjust the amount of sugar and cayenne pepper to your preference. Taste the dressing before adding it to the macaroni and adjust accordingly. If you don't have poblano peppers, you can substitute with another 1/4 cup of red bell pepper or omit it altogether. Make sure the macaroni is completely cool before adding the dressing, otherwise the dressing may become watery. This salad is best served cold. It can be stored in the refrigerator for up to 3 days.
