Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, approximately 15-20 minutes.

While the potatoes are boiling, heat the vegetable oil in a skillet over medium-high heat. Add the chopped onion and turkey bacon and sauté until the onion is translucent and the bacon is crispy, about 5-10 minutes.

In a separate bowl, dissolve the chicken bouillon cubes in the hot water, stirring until fully dissolved. Stir in the evaporated milk and garlic salt until well combined.

Once the potatoes are cooked, drain them, reserving about 1/8 of the potatoes in a separate bowl. Return the remaining potatoes to the pot.

Add the evaporated milk mixture, the onion-bacon mixture, and the butter to the pot with the potatoes. Using an immersion blender or a regular blender (in batches), blend the soup until creamy and smooth.

Add the reserved potatoes to the soup, breaking them apart slightly to create a chunkier texture. Bring the soup to a gentle boil, then reduce the heat and simmer for 15-20 minutes, or until heated through and the flavors have melded together. Serve hot.

For a richer flavor, use chicken broth instead of water and bouillon.
Garnish with fresh chives or a dollop of sour cream for an extra touch.
If you don't have evaporated milk, you can substitute with whole milk or half-and-half, but the soup will be slightly less creamy.
Feel free to add other vegetables like carrots or celery to the soup for added nutrients and flavor.
