Follow The Directions

01

Step

Preheat the oven broiler and position the oven rack about 6 inches from the heating element. (5 minutes)

02

Step

In a large, oven-proof skillet (cast iron is ideal), cook the chopped bacon over medium heat, stirring occasionally, until crispy and golden brown. Remove the bacon with a slotted spoon and set aside, reserving 1 teaspoon of bacon grease in the skillet. (10 minutes)

03

Step

Add the thinly sliced potatoes, water, garlic, red pepper flakes, salt, and pepper to the skillet with the bacon grease. Cover the skillet and cook until the potatoes are tender, about 10 minutes, stirring occasionally to prevent sticking. (10 minutes)

04

Step

Stir in the chopped Swiss chard and cook until the greens are slightly wilted, about 2-3 minutes. (3 minutes)

05

Step

Pour the beaten eggs evenly over the potato and Swiss chard mixture in the skillet. Gently stir to combine. Sprinkle the grated Parmesan cheese evenly over the top. (2 minutes)

06

Step

Transfer the skillet to the preheated oven and broil until the eggs are set and the frittata is golden brown around the edges, about 3-4 minutes. Watch carefully to prevent burning. (4 minutes)

07

Step

Remove the frittata from the oven and let it cool slightly before slicing and serving. Garnish with extra Parmesan cheese or a sprinkle of fresh herbs, if desired.

For a vegetarian option, omit the bacon and use 1 tablespoon of olive oil instead of bacon grease.
Feel free to substitute other greens, such as spinach, kale, or arugula, for the Swiss chard.
If you don't have an oven-proof skillet, you can transfer the frittata to a baking dish after step 4 and bake in a preheated oven at 375°F (190°C) until set, about 15-20 minutes.
