Heat olive oil and butter in a large skillet over medium heat. Add chicken; cook until golden brown on each side, about 5 minutes per side. Place in the prepared baking dish, leaving oil and butter in the skillet. (15 minutes)

Add green onions, mushrooms, and garlic to the skillet; cook and stir until mushrooms release their liquid and start to brown, about 10 minutes. Spread mushroom mixture over chicken pieces. (10 minutes)

Add apple juice, lemon juice, and sugar to the skillet; stir until sugar is dissolved and mixture comes to a boil. Pour sauce over chicken and mushroom mixture; cover dish. (5 minutes)

Bake in the preheated oven until sauce has reduced and chicken has absorbed the sauce, about 1 hour. (60 minutes)

For a richer flavor, consider adding a splash of dry white wine to the sauce.
