In a large skillet over medium heat, cook bacon until crisp (about 10 minutes). Remove bacon with a slotted spoon and drain on paper towels, reserving 2 tablespoons of bacon drippings in the skillet.

Add hash browns, mushrooms, green bell pepper, red bell pepper, and onion to the skillet with the bacon drippings. Cook, stirring occasionally, until the vegetables are crisp-tender (about 10 minutes). Stir in the cheese until melted. Transfer mixture to a 13x9-inch baking dish coated with cooking spray.

In a medium bowl, whisk together the eggs and sour cream until well blended. Stir in the cooked bacon. Pour the egg mixture evenly over the vegetable mixture in the baking dish.

Bake in the preheated oven until the center is set and the casserole is heated through (about 40 minutes).

For a vegetarian option, omit the bacon and add a tablespoon of olive oil to the skillet instead of bacon drippings.
Feel free to customize the vegetables based on your preference. Spinach, zucchini, or sun-dried tomatoes would also be delicious additions.
To prevent the top from browning too quickly, cover the casserole with foil during the last 15 minutes of baking.
Can be assembled the night before and baked in the morning for an easy brunch option.
