Follow The Directions

01

Step
2 hrs

Soak pinto beans and lentils in separate bowls of water for at least 2 hours, or ideally overnight. (Soaking: 2+ hours)

02

Step
5 mins

Drain and rinse the soaked beans and lentils thoroughly.

03

Step
30 mins

Heat a large skillet over medium-low heat and lightly coat with cooking spray. Add the chopped mushrooms, onion, and bell pepper. Cook, stirring occasionally, until the vegetables are softened and the mushrooms have released their moisture and slightly browned. (Cook time: 25-30 minutes). Transfer the mixture to a plate or baking sheet to cool.

04

Step
5 mins

In a food processor, combine the drained pinto beans, egg, sage, rosemary, basil, marjoram, salt, garlic powder, and cayenne pepper. Process until smooth. Transfer the mixture to a large mixing bowl.

05

Step
8 hrs

Add the drained lentils, cooled mushroom mixture, rolled oats, Cheddar cheese, and sunflower kernels to the bowl with the bean puree. Mix well until all ingredients are evenly distributed. Cover the bowl with plastic wrap and refrigerate for at least 8 hours, or overnight, to allow the flavors to meld and the mixture to firm up. (Refrigeration: 8+ hours)

06

Step
5 mins

Lightly coat a large skillet with cooking spray and heat over medium heat. Divide the chilled mixture into 16 equal portions and shape each portion into a patty.

07

Step
14 mins

Carefully place the patties in the hot skillet, ensuring not to overcrowd the pan. Cook in batches until browned and heated through, about 7 minutes per side. (Cook time: ~14 minutes per batch)

For a deeper flavor, consider using smoked paprika instead of cayenne pepper.
If the mixture is too wet, add a tablespoon of rolled oats at a time until the desired consistency is reached.
These patties can be frozen after cooking. Allow them to cool completely, then wrap individually in plastic wrap and store in a freezer-safe bag for up to 2 months.
