Step

Place the turkey carcass in a large stockpot with a lid. Pour chicken broth over the turkey to mostly cover. Add the quartered onion, celery pieces, and crushed garlic. Bring to a boil over medium heat, then cover and simmer for 2 hours, turning the carcass occasionally. (Time: 2 hours)

Carefully remove the carcass from the stockpot and set aside to cool slightly. Remove the onion, celery, and garlic from the stock and transfer them to a blender. Add about 1/2 cup of the stock to the blender, ensuring the pitcher is no more than halfway full. Secure the lid of the blender, holding it down with a folded kitchen towel. Start the blender carefully, using quick pulses to begin, then purée until smooth. Pour the puréed vegetable mixture back into the stock. (Time: 15 minutes)

Step

Remove as much cooked turkey meat from the cooled carcass as possible and add the meat to the stock. Stir in the chopped cooked turkey breast, frozen mixed vegetables, uncooked white rice, rinsed kidney beans, salt, pepper, dried oregano, dried basil, and paprika. Bring the soup to a boil, then cover and simmer until the rice is tender, approximately 20 to 30 minutes. (Time: 20-30 minutes)

For a richer flavor, consider roasting the turkey carcass before making the soup.
Adjust the amount of salt and pepper to your preference.
Feel free to add other vegetables, such as carrots, potatoes, or corn.
Leftover cooked wild rice or brown rice can be substituted for white rice for a nuttier flavor.
For a spicier soup, add a pinch of red pepper flakes.
Garnish with fresh parsley or a dollop of sour cream before serving.
