Step

Marinate the Pork & Prepare Ingredients: In a mixing bowl, combine the pork, soy sauce, rice wine, white pepper, five-spice powder, and cornstarch. Mix well and set aside to marinate. (20 minutes). Soak the dried mushrooms in cold water (20 minutes), then remove, discard stems, and thinly slice. Soak the rice vermicelli in cold water (10 minutes), then drain.

Cook the Eggs and Stir-fry Aromatics: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat. Pour in the beaten eggs and cook until set, flipping once to create a pancake. Remove, cool slightly, and thinly slice. Set aside. Heat 2 tablespoons of vegetable oil in the wok over high heat. Add garlic and dried shrimp and cook until fragrant. (20 seconds)

Stir-fry Pork and Vegetables: Add the marinated pork to the wok and cook until no longer pink. (4 minutes). Stir in the carrots and onion and cook until the carrots begin to soften. (3 minutes). Add bean sprouts, napa cabbage, and sliced mushrooms; cook and stir until the vegetables are tender. (3 minutes). Transfer the pork mixture to the bowl with the sliced egg pancake.

Combine Noodles and Serve: Wipe out the wok and return it to medium-high heat. Heat the remaining vegetable oil, then add the drained rice vermicelli noodles. Cook, stirring, until the noodles soften. (a few minutes). Stir in the reserved pork and vegetable mixture. Transfer to a serving bowl and garnish with fresh cilantro.

Adjust seasoning to your preference – add more soy sauce for a saltier flavor or a pinch of sugar for sweetness.
For a vegetarian option, substitute the pork with firm tofu, cut into small cubes and pan-fried until golden brown.
Feel free to add other vegetables such as bell peppers, snap peas, or bok choy to customize the dish.
If you don't have dried small shrimp, you can omit it or substitute with a teaspoon of fish sauce for a similar umami flavor.
