Follow The Directions

01

Step

Preheat your oven to 350°F (175°C). (Prep time: 5 minutes)

02

Step

Bring a large pot of generously salted water to a rolling boil. Add the egg noodles and cook until al dente, about 8-10 minutes. Drain thoroughly, reserving about 1/2 cup of the pasta water. (Cook time: 10 minutes)

03

Step

While the pasta cooks, dice the bacon into lardons. In a large skillet over medium-high heat, render the bacon until crispy and golden brown, approximately 8-10 minutes. Remove the bacon with a slotted spoon, draining on paper towels. Reserve 2 tablespoons of the bacon fat in the skillet. (Cook time: 10 minutes)

04

Step

In the same skillet with the reserved bacon fat, add the drained noodles. Toss to coat. Stir in the sour cream, using the reserved pasta water to loosen the sauce if needed, until the noodles are evenly coated. (Prep time: 5 minutes)

05

Step

Transfer the noodle mixture to a lightly greased baking dish. Spread the cottage cheese evenly over the top. Sprinkle generously with the crispy bacon. Season with sea salt and freshly ground black pepper. (Prep time: 5 minutes)

06

Step

Bake in the preheated oven until the cottage cheese is warmed through and slightly softened, about 5-7 minutes. (Cook time: 7 minutes)

07

Step

Let it cool for 2-3 minutes before serving.

For an extra layer of flavor, consider adding a pinch of freshly grated nutmeg to the sour cream mixture.
If you prefer a richer dish, use full-fat sour cream and cottage cheese.
Feel free to experiment with different types of bacon, such as applewood smoked or peppered bacon.
Serve immediately for the best texture and flavor.
You can also serve without baking, simply mix all ingredients together.
