For a vegetarian option, substitute the ground beef with 1-2 cans of lentils or black beans. Add a can of diced tomatoes and green chilies for extra flavor and a bit of heat. Adjust the amount of taco seasoning to your preference. Start with less and add more to taste. This soup is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days. If you don't have pinto beans, kidney beans or black beans also work well.
