Inspect the split peas, removing any debris or discolored peas. Rinse thoroughly under cold water using a fine-mesh strainer. (5 minutes)

In a heavy-bottomed pot, combine the rinsed split peas with water, diced onion, sliced celery, ketchup, olive oil, salt, crushed garlic, and bay leaves. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Cover and cook, stirring occasionally to prevent sticking, until the peas have broken down and the soup has thickened slightly. (90 minutes)

Add the sliced carrots to the soup. Continue to simmer, covered, stirring regularly, until the peas are completely dissolved and the soup reaches a creamy consistency. (90 minutes)

Remove and discard the bay leaves. Season with freshly ground black pepper to taste. Serve hot, garnished with a drizzle of olive oil or a sprinkle of fresh herbs, if desired.

For a richer flavor, consider sautéing the onion and celery in olive oil before adding the remaining ingredients.
Adjust the amount of garlic and bay leaves to your personal preference. A pinch of smoked paprika can also add a delicious depth of flavor.
If the soup becomes too thick, add a little more water to reach your desired consistency.
Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or in the microwave.
