Add Arborio rice to the reserved, garlic-infused oil in the stockpot. Stir to coat the rice evenly. Add diced tomatoes and cook, stirring frequently, until the rice is lightly toasted and the tomatoes release their fragrance, about 8-10 minutes.

Pour in beef broth and stir well, scraping up any browned bits from the bottom of the pot. Add spinach and stir until wilted, about 3-5 minutes.

Stir in the sliced roasted garlic. Bring to a gentle simmer, then reduce heat to low, cover, and allow the soup to simmer for 15-20 minutes, or until the flavors have melded beautifully and the rice is tender.

For an even richer flavor, roast the garlic heads whole in the oven until soft before separating the cloves.
A splash of heavy cream or a dollop of Greek yogurt can add a luxurious creaminess to the finished soup.
