In a large bowl or the bowl of a stand mixer fitted with the whisk attachment, combine 1 1/2 cups of heavy cream, mascarpone cheese, pumpkin puree, 1/2 cup of Sugar In The Raw®, and pumpkin pie spice. (Prep time: 5 minutes)

Beat on high speed with a hand mixer or on medium-high speed in a stand mixer until stiff peaks form. Be careful not to overbeat. (Mixing time: 5-7 minutes)

In a separate medium bowl, beat the remaining 1/2 cup of heavy cream with 1 tablespoon of Sugar In The Raw® until stiff peaks form. Set aside. (Mixing time: 3-5 minutes)

In a small bowl, whisk together the cooled brewed coffee, dark rum, and the remaining 1 tablespoon of Sugar In The Raw® until the sugar is dissolved. (Prep time: 2 minutes)

Prepare six individual serving cups or ramekins (approximately 4-inch diameter). Quickly dip each ladyfinger into the coffee-rum mixture, ensuring they are moistened but not soggy. (Prep time: 5 minutes)

Line the bottom of each cup or ramekin with a single layer of the soaked ladyfingers. You may need to break or cut the ladyfingers to fit. (Assembly time: 5 minutes)

For a richer coffee flavor, use espresso instead of brewed coffee.
If you don't have dark rum, brandy or coffee liqueur can be substituted.
To make this recipe ahead of time, assemble the tiramisu and refrigerate for up to 24 hours before adding the whipped cream and white chocolate.
For a less sweet tiramisu, reduce the amount of Sugar In The Raw® slightly.
