Step

In a large bowl, combine the tripe and lemon juice. Allow to marinate for 10 minutes.

Transfer the tripe and lemon juice to a large pot. Cover with 2 inches of water. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, until the tripe is slightly softened (approximately 10 minutes). Drain and rinse the tripe thoroughly.

Return the tripe to the pot. Cover with 2 quarts of beef broth, adding water as needed to ensure the tripe is submerged. Bring to a boil, then reduce the heat and simmer gently until the tripe is very tender (approximately 2 hours).

Stir in the remaining beef stock, cassava, potatoes, yams, pumpkin, sweet potatoes, tomato sauce, sofrito, and corn. Continue to cook until all the vegetables are tender (approximately 20 minutes). Season generously with salt and pepper to taste.

For an even richer flavor, consider using homemade beef stock. If using store-bought, opt for a low-sodium variety to control the saltiness of the final dish.
Sofrito is a cornerstone of Puerto Rican cuisine. Feel free to adjust the amount to your preference, or make your own for a truly authentic experience.
Serve hot in deep bowls, accompanied by fluffy white rice and slices of creamy avocado.
