For a richer flavor, use full-fat evaporated milk. For a lighter soup, use low-fat or skim evaporated milk. If you don't have instant mashed potato flakes on hand, you can thicken the soup by mashing some of the potatoes with a potato masher or immersion blender before adding the evaporated milk. Feel free to add other vegetables to the soup, such as diced leeks, parsnips, or turnips. This soup can be made ahead of time and reheated. The flavor will actually improve as it sits.
