In a large soup pot, bring the water to a rolling boil. (Approximately 5 minutes)

Add the ditalini pasta to the boiling water and cook, stirring occasionally to prevent sticking, for 12 minutes, or until al dente.

Stir in the tomato sauce, cannellini beans, kidney beans, black-eyed peas, frozen green peas, corn, potato, carrots, onion, garlic, parsley, Italian seasoning, salt, and pepper.

Return the soup to a boil, then reduce the heat to low. Simmer gently, stirring occasionally, for 30 to 45 minutes, or until the vegetables are tender and the flavors have melded together.

Serve hot, drizzled with a touch of extra-virgin olive oil and sprinkled with grated Parmesan cheese, if desired.

For a richer flavor, sauté the diced onion, carrots, and garlic in olive oil until softened before adding them to the soup.
A bay leaf added during the simmering process can enhance the depth of flavor. Remember to remove it before serving.
If you prefer a thicker soup, you can blend a portion of the soup (about 1-2 cups) before serving and stir it back into the pot.
This soup is even better the next day, as the flavors continue to develop.
