Prepare the caramel: In a small saucepan over medium heat, add sugar. Cook gently, without stirring, occasionally shaking, until sugar melts. Continue cooking until it turns a deep golden brown. Pour into a large round glass baking dish, swirl to coat the bottom evenly, and let cool for 15 minutes. (25 minutes)

Make the flan mixture: In a large bowl, whisk together the beaten eggs, cream of coconut, sweetened condensed milk, and pineapple juice until smooth and fully combined. Carefully pour the mixture over the cooled caramel in the baking dish. (5 minutes)

Create a water bath: Place a kitchen towel in the bottom of a large roasting pan. Set the flan-filled baking dish on top of the towel. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the flan dish. (5 minutes)

Bake the flan: Gently place the roasting pan into the preheated oven. Bake until a knife inserted into the center of the flan comes out clean, approximately 1 hour. (60 minutes)

Cool and chill: Remove the roasting pan from the oven and allow the flan to cool in the water bath for 30 minutes. After the initial cooling, refrigerate the flan for at least 2 hours, or preferably overnight, to ensure it's thoroughly chilled. (150 minutes)

Unmold and serve: To unmold, run a thin knife around the edge of the flan to loosen it from the sides of the dish. Place a serving platter over the baking dish, and carefully invert the flan onto the platter. Drizzle any remaining caramel sauce from the baking dish over the top of the flan, allowing it to pool around the base. Sprinkle with toasted shaved coconut, if desired. Refrigerate until ready to serve. (10 minutes)

For a deeper caramel flavor, cook the sugar until it's a rich amber color, but be careful not to burn it.
Ensure the water bath reaches halfway up the sides of the flan dish for even cooking and a smooth texture.
Chilling the flan completely is crucial for easy unmolding and the best flavor.
Toasting the coconut adds a delightful crunch and nutty flavor.
