Reduce heat to low, add salt, cover the pot, and cook the onions very slowly, stirring occasionally, until they are deeply golden brown and caramelized, about 60 minutes. The key here is patience; don't rush the caramelization process.

Transfer the caramelized onions to a larger pot if needed. Increase heat to medium. Pour in the white wine and bring to a boil, scraping up any browned bits from the bottom of the pot. (5 minutes)

Stir in the chicken broth, white pepper, and nutmeg. Bring to a gentle simmer, uncovered, and cook for 15 minutes to allow the flavors to meld.

Stir in the shredded Gruyere cheese until melted and slightly stringy. (2 minutes)

Ladle the soup into bowls, top with a slice of crusty bread, and serve immediately.

For a richer flavor, use beef broth instead of chicken broth.
A splash of cognac or sherry added at the end of cooking elevates the flavor profile.
If you don't have Gruyere, Comté or Emmental cheese are excellent substitutes.
For the bread, you can use a baguette, sourdough, or any crusty bread you like. Toast the bread lightly before adding it to the soup.
