In a large saucepan or Dutch oven over medium-high heat, brown the ground beef, about 4-5 minutes. Add onion and celery and cook until softened and translucent, about 3-4 minutes, stirring occasionally. Stir in the minced garlic until fragrant, about 1 minute.

Pour in the beef stock, scraping up any browned bits from the bottom of the pot. Bring to a boil, then add the chopped carrots.

Create an herb bundle by tying together the parsley, rosemary, thyme, and sage with cooking twine. Add the bundle to the pot along with the bay leaf. Season generously with salt and pepper. Bring back to a boil, then cover, reduce heat, and simmer gently for about 10 minutes.

Increase the heat to medium and add the potatoes, green beans, corn, and drained diced tomatoes. Return to a boil, partially covered, and simmer until the potatoes are tender when pierced with a fork, about 25 minutes. Remove the herb bundle and bay leaf and discard. Adjust seasoning with additional salt and pepper to taste.

For a deeper flavor, consider browning the ground beef in bacon fat before adding the vegetables.
Feel free to customize the vegetables to your liking. Root vegetables like parsnips or turnips would be excellent additions.
If you don't have fresh herbs on hand, you can substitute with dried herbs. Use about 1 teaspoon of each dried herb.
