In a medium saucepan, bring water to a boil. Add rice, cover, reduce heat to low, and simmer until rice is tender and water is absorbed, about 18-20 minutes. Fluff with a fork and set aside.

Add the chopped smoked salmon, cooked rice, frozen peas, and scrambled eggs to the skillet. Toss gently to combine all ingredients evenly.

Cook and stir the fried rice until heated through and the flavors have melded together, about 3-5 minutes. Season to taste with salt and freshly ground black pepper. Serve immediately.

For a richer flavor, try using sesame oil instead of regular cooking oil.
Add a splash of soy sauce or tamari for extra umami.
Feel free to customize this recipe with your favorite vegetables, such as carrots, bell peppers, or edamame.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
