In a medium saucepan, whisk together the cornstarch and a splash of milk to form a smooth slurry. Gradually whisk in the remaining milk until fully incorporated. (2 minutes)

Add the sugar and salt to the saucepan. Cook over medium heat, stirring constantly with a whisk, until the mixture begins to thicken slightly. (Approximately 15 minutes)

In a separate bowl, whisk the egg yolks until pale and slightly frothy. Gradually whisk in about 1/4 cup of the warm cornstarch mixture to temper the eggs. This prevents them from scrambling when added to the hot pan. (3 minutes)

Pour the tempered egg yolk mixture into the saucepan and continue to cook, stirring constantly, until the pudding thickens significantly and coats the back of a spoon. Add the lemon rind and cook for 7-10 minutes, stirring gently to avoid scorching.

Remove the saucepan from the heat and stir in the vanilla extract. (1 minute) Discard the lemon rind.

For an extra smooth texture, pass the finished pudding through a fine-mesh sieve before serving.
Adjust the amount of sugar to your personal preference. Honey or maple syrup can also be used as alternative sweeteners.
Garnish with fresh banana slices and mint leaves for an elegant presentation and complementary flavors.
