Move all the ingredients to one half of the skillet. Crack the eggs into the empty half and cook for 2 minutes, or until they begin to set around the edges.

Scramble the eggs and then mix them thoroughly with the rice, tofu, and vegetables until well combined. Season with the remaining soy sauce and sugar, mixing well to ensure even distribution.

Stir in the chopped tomato and cook for 1 minute, stirring continuously, until heated through and slightly softened. Season with salt, white pepper, and additional soy sauce to taste.

For best results, use day-old rice as it is drier and will fry up better without becoming mushy.
Feel free to customize this recipe with your favorite vegetables, such as peas, bell peppers, or broccoli.
If you don't have white pepper, black pepper can be used as a substitute.
Adjust the amount of soy sauce and sugar to suit your personal taste preferences.
