Repeat the layering process twice more, finishing with a final layer of eggplant. Sprinkle the grated mozzarella cheese evenly over the top. (15 minutes)

Bake in the preheated oven until the cheese is beautifully browned and the vegetables are bubbling and tender, approximately 35 to 40 minutes. (40 minutes)

For an extra layer of flavor, consider adding a sprinkle of Parmesan cheese along with the mozzarella.
If you prefer a softer eggplant texture, you can lightly salt the eggplant slices and let them sit for 30 minutes before brushing with olive oil. This will help draw out excess moisture.
Feel free to experiment with other vegetables, such as zucchini or yellow squash, to customize the bake to your liking.
