Melt butter with olive oil in a large, heavy-bottomed pot over medium-low heat. Add minced onion and sauté until translucent and softened, about 5 minutes.

Whisk in flour into the butter and onion mixture, cook for 1 minute. Gradually whisk in half-and-half and reserved clam juice until smooth.

Stir in Parmigiano-Reggiano cheese until melted and incorporated, about 2 minutes. Add cubed potatoes, cream-style corn, fresh corn kernels, and halved cherry tomatoes. If chowder is too thick, stir in water, about 1/2 cup at a time, until desired consistency is reached. Bring to a gentle simmer and cook until potatoes are tender, about 15 minutes. Season with sea salt and pepper to taste.

Gently stir in drained clams, haddock pieces, and shrimp. Simmer until haddock and shrimp are fully cooked through, about 5 minutes.

Stir in lobster meat and its juice; cook just until heated through, about 1 minute. Do not overcook the lobster.

For a richer flavor, use heavy cream instead of half-and-half.
Adjust the amount of water to reach your desired chowder consistency.
Be careful not to overcook the seafood; it should be tender and succulent.
Garnish with extra grated Parmigiano-Reggiano and fresh parsley before serving.
You can substitute other types of seafood such as cod, scallops, or mussels.
