Step 1: Combine Ingredients (5 minutes). In a slow cooker, combine the chicken, butternut squash, red beans, hominy, chicken broth, salsa, beer, and Mexican oregano.

Step 2: Slow Cook (7 hours 30 minutes/3 hours 30 minutes). Cover and cook on Low for 7 1/2 hours or on High for 3 1/2 hours, or until the chicken is cooked through and the squash is tender.

Step 3: Add Cream and Finish (30 minutes). Stir in the heavy whipping cream. Cover and continue cooking on Low or High for 30 minutes to allow the flavors to meld.

For a vegetarian version, omit the chicken and add another can of beans or vegetables.
Spice it up by using a hotter salsa or adding a pinch of cayenne pepper.
If you don't have Mexican oregano, regular oregano will work in a pinch.
To make it ahead, prepare through step 2, cool slightly, then refrigerate. Reheat in the slow cooker or on the stovetop before adding the cream.
