Heat the vegetable oil in a large skillet or pot over medium heat. Add the diced onions and bell peppers. Cook, stirring occasionally, until the onions are softened and translucent, about 5 minutes.

Add the diced carrots, tomatoes, chopped green chilies, water, bouillon cube, curry powder, chili powder, salt, and pepper to the skillet. Stir well to combine.

Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and cook, stirring occasionally, until the vegetables are tender and the sauce has thickened, about 15-20 minutes.

For a richer flavor, consider adding a tablespoon of tomato paste along with the diced tomatoes.
Adjust the amount of chili powder and green chilies to your preferred level of spiciness.
Chakalaka can be served warm or cold. It's even better the next day after the flavors have had a chance to meld.
Serve as a side dish with grilled meats, pap (maize porridge), or bread. It also makes a great topping for baked potatoes or a filling for sandwiches.
If you don't have fresh tomatoes, you can use a can of diced tomatoes, drained.
