Reduce the heat to low. Add the ketchup, brown sugar, molasses, 1/4 cup of the spiced rum, hoisin sauce, tomato paste, sherry vinegar, chili powder, and cayenne pepper. Stir well to combine. (2 minutes)

Simmer the sauce, stirring occasionally, for 5 minutes, allowing the flavors to meld together. Ensure the sauce is heated through and well blended. (5 minutes)

Stir in the remaining 1/4 cup of spiced rum. This adds a final burst of flavor and aroma. (1 minute)

For a milder sauce, reduce or omit the cayenne pepper. For a spicier kick, add a pinch of scotch bonnet pepper.
Feel free to adjust the amount of brown sugar to suit your preference for sweetness.
The sauce can be stored in an airtight container in the refrigerator for up to 1 week. The flavors will continue to develop over time.
This sauce is excellent on grilled chicken, pork, or fish. It also makes a fantastic dipping sauce for fried plantains or sweet potato fries.
