Step

Prepare the Fennel: Cut the green stalks from the top of the fennel bulbs and remove the base. Reserve 2 tablespoons of chopped fronds for garnish. Cut each bulb into 8 wedges. (5 minutes)

Sauté and Deglaze: Melt butter in a large pan over medium heat. Add fennel wedges, flat-side down, and brown for 3 minutes. Flip and cook for 2 minutes more. Add garlic and thyme, cooking until fragrant (about 30 seconds). Pour in wine and deglaze the pot, scraping any browned bits. Reduce wine by half. (8 minutes)

Braise: Add chicken broth and orange juice. Reduce heat to medium-low, cover, and simmer until fennel is very tender. (25-30 minutes)

Serve: Plate braised fennel. Sprinkle with salt, orange zest, and reserved fennel fronds.

For a richer flavor, use homemade chicken broth.
Adjust the amount of orange juice and zest to your preference.
Braised fennel is excellent served alongside roasted chicken, fish, or pork.
