Scoop and Bake (13 minutes per batch): Using a 1 1/2 tablespoons scoop or spoon, portion out the dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Bake in the preheated oven until the edges are golden brown and the centers are still slightly soft, about 12-14 minutes. Rotate the baking sheet halfway through baking for even browning.

For an even richer flavor, try using dark chocolate chips or chunks instead of semisweet.
To toast the pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant. Let cool before chopping.
If you don't have vanilla bean paste, you can substitute with 1 teaspoon of vanilla extract, but the paste adds a more intense vanilla flavor.
