In a large bowl, toss zucchini, shallots, 5 tablespoons of olive oil, garlic, and crushed red pepper until evenly coated. Spread the mixture onto rimmed baking sheets in a single layer. Season generously with salt and pepper. (5 minutes)

Roast in the preheated oven, turning the vegetables occasionally, until they are tender and slightly caramelized, about 30 minutes. (30 minutes)

While the vegetables are roasting, bring a large pot of lightly salted water to a rolling boil. Add the ziti pasta and cook, stirring occasionally, until al dente, about 9-12 minutes. Reserve 3/4 cup of the pasta cooking water before draining. (12 minutes)

Return the drained pasta to the pot and toss with 1 tablespoon of olive oil to prevent sticking. Add the roasted vegetables, 1/4 cup of the reserved cooking water, and the remaining 1 tablespoon of olive oil. Stir over medium heat until everything is heated through and well combined. (5 minutes)

Remove from heat and stir in 3/4 cup of fresh basil and the grated Parmesan cheese. Toss well, adding more of the reserved cooking water, 1 tablespoon at a time, if the pasta seems dry. Season with additional salt and pepper to taste. (3 minutes)

Serve immediately, garnished with the remaining fresh basil.
