Combine and Boil: In a pot, mix water and instant coffee. Bring to a boil. Add pectin and return to a boil. Then, add sugar and bring back to a rolling boil. (Cook time: 5 minutes)

Jelly Formation: Boil the mixture for 8 to 10 minutes, stirring constantly to prevent scorching. (Cook time: 8-10 minutes)

Jarring: Pour the hot jelly into the hot, sterilized jars, leaving about 1/4 inch headspace at the top. Remove air bubbles by running a clean knife or thin spatula around the insides of the jars. Wipe rims clean with a moist paper towel to remove any residue. Top with lids and screw rings on tightly. (Prep time: 10 minutes)

Processing: Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and carefully lower the jars (about 2 inches apart) into the boiling water using a jar holder. Cooling and Setting: Remove the jars from the stockpot and let them rest, several inches apart, for 12 to 24 hours. You should hear a 'pop' sound as the jars seal. After cooling, test the seal by pressing the center of each lid with a finger; the lid should not move up or down. Remove the rings for storage and store the sealed jars in a cool, dark place. (Cooling time: 12-24 hours)

Adjust coffee granules to taste. For a bolder coffee flavor, use a darker roast instant coffee.
Sterilizing jars is crucial for safe storage. Ensure they are thoroughly cleaned and heated before filling.
Keep a close eye on the boiling mixture to prevent it from scorching. Consistent stirring is key.
If you don't have a jar holder, you can carefully use tongs, but be extra cautious to avoid breaking the jars.
The 'popping' sound indicates a successful seal. If a jar doesn't seal, store it in the refrigerator and consume it within a week.
Serve chilled on its own, with whipped cream, or as a unique addition to desserts.
