Step

In a medium saucepan, bring water and rice mix to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed. (Approximately 20-22 minutes). Transfer rice to a medium bowl and allow to cool.

While the rice is cooking, bring a medium pot of water to a boil. Add frozen peas and cook until just tender (about 2 minutes). Drain and cool.

Add cooled peas, parsley, tomatoes, artichoke hearts, olives, and green onions to the cooled rice. Mix gently until well combined.

In a blender or tightly sealed jar, combine white balsamic vinegar, canola oil, and sugar. Blend or shake vigorously until emulsified and creamy.

Drizzle the dressing over the salad and toss gently to coat. Refrigerate the salad until ready to serve, allowing the flavors to meld.

For an extra layer of flavor, toast the wild rice mix in a dry pan for a few minutes before cooking.
Feel free to substitute other vegetables, such as bell peppers, corn, or cucumbers, based on your preference and availability.
The salad can be made a day ahead of time. Add the dressing just before serving to prevent the salad from becoming soggy.
