In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. (2 minutes)

Add the chopped onion and minced garlic. Sauté until softened and lightly browned, about 5-7 minutes.

Stir in the allspice, ground cloves, and cayenne pepper. Cook for another minute until fragrant.

Pour in the white wine, scraping up any browned bits from the bottom of the pot. Allow the wine to reduce by half, about 3-5 minutes.

Add the tomato juice, tomato paste, and sugar. Season with oregano, salt, and pepper. Bring the mixture to a boil. (5 minutes)

Once boiling, reduce the heat to low, cover, and simmer for at least 90 minutes, or until the sauce has thickened to your desired consistency. Stir occasionally to prevent sticking. (90 minutes)

For an even richer flavor, consider adding a bay leaf during the simmering process, removing it before serving.
Adjust the amount of cayenne pepper to suit your preferred level of spice.
If the sauce becomes too thick during simmering, add a little water or extra tomato juice to reach your desired consistency.
This sauce can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for longer storage.
