For an extra-flaky crust, ensure all ingredients are very cold. You can even chill the flour and shortening beforehand. If you don't have maple extract, you can use maple syrup. Reduce the amount of water added to the currants by an equal amount. For a nuttier flavor, toast the pecan halves before placing them on top of the tarts. These tarts can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
