Follow The Directions

01

Step

Gather all ingredients.

02

Step

Heat olive oil in a skillet over medium-high heat. Add mushrooms, onions, and a large pinch of salt. Sauté, stirring occasionally, until mushrooms start to turn golden brown and onions are transparent, about 5 minutes.

03

Step

Make space in the center of the pan, add garlic, and cook until fragrant, about 30 seconds, adding more olive oil if needed. Add bell peppers and sauté until they just start to soften, about 2 minutes. Season with black pepper, cayenne, and more salt to taste if needed.

04

Step

Remove from heat, transfer vegetables to a baking dish or pan, and preheat the oven to 400 degrees F (200 degrees C).

05

Step

In a bowl, combine ricotta, Parmesan, and Monterey Jack cheese. Season with parsley, salt, pepper, and nutmeg. Mix well until all ingredients are fully incorporated.

06

Step

Divide filling between 4 slices of ham, and gently roll each into a neat tube.

07

Step

Arrange the ham rolls atop the vegetable mixture in the baking dish. Sprinkle generously with shredded Monterey Jack cheese.

08

Step

Bake in the preheated oven until the cheese is melted, bubbly, and lightly golden, and the entire dish is heated through, approximately 25 to 30 minutes.

09

Step

Garnish with a sprinkle of fresh parsley, if desired, and serve hot. Pairs beautifully with mashed potatoes, pasta, polenta, or rice.

For an extra layer of flavor, consider adding a touch of pesto to the ricotta cheese mixture.
If you prefer a spicier kick, increase the amount of cayenne pepper to your liking.
Ensure the ham slices are thick enough to hold the filling without tearing during rolling.
The involtini can be assembled ahead of time and stored in the refrigerator until ready to bake. Add an additional 5-10 minutes to the baking time if baking from cold.

The involtini were a bit bland for my taste, so I added some Italian seasoning to the cheese mixture. That did the trick!
