In a small saucepan, combine the chopped peaches, sugar, water, and tied basil sprigs. Set over medium heat and simmer, stirring occasionally, until the sugar has fully dissolved. (Approximately 5 minutes)

Remove from heat and allow the syrup to cool to room temperature. (Approximately 10 minutes). Once cooled, discard the basil sprigs.

Transfer the cooled syrup, including the peaches, into a Mason jar or airtight container. Seal tightly and refrigerate until thoroughly chilled. (Approximately 1 hour)

Once chilled, measure 3 fluid ounces of the peach-basil syrup into a cocktail shaker. Gently muddle the peaches to release their flavors further.

Add 4 ice cubes, the bourbon, and aromatic bitters to the shaker. Cover securely and shake vigorously until the ice is mostly melted, indicating the drink is well-chilled.

Pour the mixture into a chilled 8-ounce glass. Add the remaining 4 ice cubes.

Gently stir in the lime-flavored sparkling water to add a refreshing fizz.

Garnish with a fresh peach slice and a basil leaf for an elegant finishing touch.

For an extra layer of flavor, consider grilling the peach slices lightly before adding them to the syrup.
Experiment with different types of bitters to customize the cocktail to your preferences. Orange or peach bitters would complement the other flavors beautifully.
Adjust the sweetness of the syrup to your liking by adding more or less sugar. Remember that the bourbon will also contribute to the overall sweetness.
If you don't have lime-flavored sparkling water, plain sparkling water with a squeeze of fresh lime juice will work well.
