For a richer flavor, consider using a seafood stock or fumet in place of some of the half-and-half. Adjust the amount of crushed red pepper to your desired level of spiciness. Fresh crawfish can be substituted for frozen, if available. A dash of hot sauce adds a little extra kick. If you don't have Creole seasoning, you can make your own blend using paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, and black pepper.
