Transfer the cooked beef to a colander to drain excess fat, then place it in a large bowl. Discard any grease from the skillet between batches.

Heat the olive oil in a large 16-quart pot over medium-high heat. Add the chopped celery, onions, green bell pepper, red bell pepper, jalapeno peppers, and minced garlic. Cook, stirring occasionally, until the vegetables soften and the onions become translucent (7-10 minutes).

Add the reserved cooked ground beef, stewed tomato puree, and the undrained light and dark red kidney beans to the pot with the vegetables. Stir well to combine all the ingredients.

Bring the chili to a simmer, then reduce the heat to low. Cover the pot and let the chili simmer for 1 hour, allowing the flavors to meld and deepen. Stir occasionally to prevent sticking.

For a richer flavor, consider using a blend of ground beef and ground chuck.
Adjust the amount of jalapenos to control the level of spiciness. Remember that some jalapenos can be hotter than others.
