Drain most of the grease from the skillet, leaving about 1 tablespoon. Add pumpkin puree, gochujang, the remaining green onions, sesame oil, and diced chili peppers. Cook and stir over medium heat for 2 minutes, allowing the flavors to meld.

Meanwhile, cook bucatini in a large pot of boiling salted water until al dente, about 10 minutes, reserving about 1/2 cup of the pasta water before draining.

Transfer the cooked bucatini to the skillet with the pumpkin sauce. Squeeze lime juice over the noodles. Add about 2 tablespoons of the reserved pasta water and toss to combine. Continue adding pasta water gradually until the sauce reaches your desired consistency.

Turn off the heat and stir in chopped fresh cilantro. Transfer noodles to serving plates and top with the ground pork mixture.
