In a large soup pot, place the smoked turkey carcass. Pour in the vegetable broth and water, ensuring the carcass is mostly submerged. Bring to a boil over high heat, then reduce heat to low. Simmer gently until the turkey meat easily separates from the bones, approximately 1 to 2 hours.

Carefully remove the turkey carcass from the pot. Allow it to cool slightly before handling. Pick the meat from the bones, discarding the bones and any skin or cartilage. Chop the turkey meat into bite-sized pieces and return it to the broth in the pot.

Add the chopped green beans, frozen corn, shredded carrot, white rice, celery, onion, green bell pepper, and red bell pepper to the soup. Stir well to combine all ingredients. Bring the soup to a gentle simmer and cook until the rice is tender and the vegetables are cooked through, about 1 hour.

Reduce heat to low and stir in the cream cheese and shredded Cheddar cheese until they are completely melted and the soup is smooth and creamy. Season with ground black pepper to taste. Add more cheese if a richer flavor is desired.

For an even richer flavor, consider using homemade turkey stock instead of vegetable broth.
Feel free to adjust the amount of vegetables to your liking. Other great additions include diced potatoes, mushrooms, or zucchini.
If you don't have a smoked turkey carcass, you can use leftover cooked turkey meat instead. In this case, simply skip the first step and add the cooked turkey to the soup along with the vegetables.
To prevent the rice from sticking to the bottom of the pot, stir the soup occasionally during the simmering process.
